Ingredients:
1 lb lean ground beef
1/2 cup water
1 cup salsa
1 can low-sodium tomato soup
1 cup frozen corn kernels
1 cup sliced carrots
1 cup sliced onion
1 cup sliced mushrooms
1/2 cup low-fat cheddar cheese
1/2 clove garlic, crushed
2 tbsp onion flakes
Preparation:
1. In a large skillet, brown the ground beef over medium heat.
2. Add water, salsa, soup, and corn; cook for 5 minutes.
3. Add carrots, onions, and mushrooms; cook for another 5 minutes.
4. Sprinkle with cheddar cheese, crushed garlic and onion flakes; stir before serving.
