Meal Prep Sundays: Beef Veggie Skillet


Get ready for the week with this awesome beef veggie skillet recipe! With six servings, we're willing to bet this one will definitely be making an appearance in your meal management system throughout the week.

Makes 6 servings.


1 lb lean ground beef 1/2 cup water 1 cup salsa 1 can low-sodium tomato soup 1 cup frozen corn kernels 1 cup sliced carrots 1 cup sliced onion 1 cup sliced mushrooms 1/2 cup low-fat cheddar cheese 1/2 clove garlic, crushed 2 tbsp onion flakes


1. In a large skillet, brown the ground beef over medium heat. 2. Add water, salsa, soup, and corn; cook for 5 minutes. 3. Add carrots, onions, and mushrooms; cook for another 5 minutes. 4. Sprinkle with cheddar cheese, crushed garlic and onion flakes; stir before serving.
