Meal Prep Sundays: Clean Spaghetti & Meatballs

meatballs-02From our Community Manager Anya: One of the hardest parts of prep is missing out on classic homemade meals. (I could eat Spaghetti & Meatballs on the daily. True story.) Luckily, I came across a turkey meatball recipe that fits my program! Add some Quest Nutrition Pasta into the mix, and BOOM. Classic meal. Healthy twist. Win-Win. Enjoy!

Clean Spaghetti & Meatballs:

2 20oz. packages of 7% ground turkey 3 cups spinach 4 tbsp minced garlic 1 tbsp coconut oil spray ¼ cup chopped cilantro 2 chopped Jalapenos (Optional) ½ cup chopped white onion 2 packages Quest Nutrition Spaghetti Pasta


Start with your ground turkey. I meal prepped for 3 days (6 individual meals total) so I prepped a lot of ground turkey. Add spices to season your meat- 2 tsp canyenne pepper, 2 tsp garlic powder, 2 tsp cumin. Mix the seasoning into the meat.

Make individual 3 oz. meatballs.

Heat up your skillet to medium heat on the stove. Spray with your Coconut oil and add your garlic, onion, & Jalapenos to the pan.

Cook until the garlic and onions are brown then add in the meatballs with the cilantro.

Roll the meatballs around for 5-10 minutes in the skillet until 2 sides are brown.

Add in the 3 cups spinach over the meatballs and cover with a glass lid or foil. Move the heat to low and leave to simmer for 5-10 minutes. (The turkey is low fat and this keeps the meat tender and moist!)

While the meatballs are simmering, open the Quest Pasta. Drain the pasta two times. Set up a medium sized pot and bring water to a boil.

2013-12-02 22.59.47 Add in Quest Pasta and boil for 2-3 minutes. Take away from heat and drain. Turn off the meatball pan heat and drain excess water. Meal prep in containers and you are set for 3 days! Enjoy!

Optional Simple Marinara Sauce:

  • ½ Can Tomato Paste
  • 4 Cloves minced Garlic
  • ¼ cup white onion
  • 1 Jalapeno (Only if you like spicy)
  • Pinch of Garlic powder, & pepper.
  1. Spray a small pan with Coconut Oil.
  2. Add in minced garlic, onion, (jalapeno), spices & tomato paste.
  3. Bring to simmer for 2-3 minutes on low heat.
  4. Top pasta & meatballs with yummy sauce!

If you would like to freeze up some of your meatballs simply reheat for 2 minutes in the microwave and cook up some fresh Quest pasta.
