I am a huge fan of Mediterranean food! I am one of those "cannot get enough pita & hummus people". While trying to eat clean and have balance with my meal plan I decided to try my own take on kebabs &

Lemon & Mint Chicken Skewers
Ingredients: 1 Package(lb.) Boneless Skinless Chicken Breast, trimmed, cut into 1 inch pieces 1 teaspoon finely grated lemon rind 1/3 cup lemon juice ½ cup chopped white onion ½ cup chopped fresh mint leaves 2 cloves garlic, minced 2 chopped Jalapenos (Optional) 2 tablespoons extra virgin olive oil 1 tbsp coconut oil spray
Hummus
Ingredients: 15 oz. can of drained chickpeas (garbanzo beans) ¼ cup lemon juice ¼ cup tahini Large garlic clove, minced 2 tablespoons olive oil ¼ cup chopped cilantro
Need: Bamboo Skewers
Steps: Combine lemon rind, lemon juice, mint, garlic, and olive oil in glass dish. Add cut chicken into dish and coat thoroughly. Let this marinate in the refrigerator for 30 minutes. While the chicken in marinating, soak the bamboo skewers in water for 30 minutes Heat up stove to medium. Thread chicken onto skewers. Discard remaining marinade.
Spray pan with coconut oil spray. Add in onion & jalapenos. Add skewers to the pan in batches and cook until brown.
Transfer to a plate & cover to keep warm. Meanwhile, make hummus. Place tahini and lemon juice in a food processor. Process until smooth. Add in oil, garlic, and cilantro. Process to combine. Slowly add in chickpeas. Process until smooth.
